Ok. Ok. Ok…. maaannnn… ok… * breathe * Let me start from the beginning. I was in my kitchen, minding my OWN business, when the thought hit me… I NEED a salad, and I want a REALLY, REALLY good salad dressing. What I didn’t know was that I was gonna exceed ALLA my own expectations! Let me tell you…
In my soon-to-be-released book, Get Dressed Up! (which you can pre-order RIGHT NOW by clicking on the link… I’m just sayin), I have a chapter called “Doc’s Favorites”. This is a highlight of just a few of my absolute favorite dressings since I started making my own. Well, my #1 favorite dressing is called… wait for it…. “Fig Favorite!” LOL!!! Yea, it’s that good. Well, today I decided to do something a teeny, tiny bit differently, the Fig-Orange Salad Dressing with a kick. And it came out absolutely fan-TASTIC!!
Fig Orange Dressing for the WIN!!
In the pantry, I had a jar of a Fig Orange Spread that I picked up from the store at some point. I pulled out the white wine vinegar (original recipe called for balsamic) and oil, a lil’bit of salt, and BAM!! I’m in business. It was sooooo simple. It was just four ingredients…. well, it actually ended up being 5 because I wanted to get a lil fancy and add a couple sprinkles of cayenne. Put them all in a jar (I used an old relish jar – I keeps it one hunnit! LOL) and shake until mixed. That’s it! It was done in about 5 minutes or so. Once I guzzled down my salad (I really should have eaten it more slowly, but that dressing was so darn good!) I had a bit of dressing left, so I put a dollop on a small piece of fish. FOOD-GASM! Y’all….. I’m just sayin. It was almost perfect… and so extremely simple. You GOTTA try this!
2 heaping tbsp of Fig Orange Spread
1/4 cup (2 oz) White Wine Vinegar
1/4 cup (~2 oz) Extra Virgin Olive Oil
Salt to taste
Cayenne to taste
— Put all ingredients into a jar. Close the lid and shake like your salad depends on it!! Then pour and eat.
